Spanish Brittle with Smoked Paprika and Black Pepper Chocolate

for the brittle

1 cup granulated sugar

¼ cup cocoa nibs

1 teaspoon smoked paprika

1 tablespoon honey

1 teaspoon baking soda, sifted to remove any lumps

for the topping

1 cup dark chocolate wafers, melted in a double boiler

¼ tsp. black pepper

1 cup dulche de leche chocolate wafers, melted in a double boiler

1 tsp coarse sea salt

smidgeon of smoked paprika

make the brittle:

over medium heat in a medium heavy skillet, add the sugar and let melt, do not stir. when ¾ melted, add the paprika, honey and cocoa nibs. stir. then add the teaspoon sifted baking soda and be sure to stir well so it dissolves completely. pour onto parchment lined sheet pan and drizzle the melted dark chocolate and the dulche de leche chocolate over the hot brittle. sprinkle with the coarse salt and a bit of smoked paprika. let cool. break apart into small pieces and serve!
